Recipe Ingredients for Chicken Eggplant Stirfry

158 grams Peppers, Sweet, Red
211 grams Peppers, Sweet, Yellow
166 grams Onions
18 grams Ginger Root
11 grams Garlic
267 grams Eggplant
480 grams Chicken
0.75 cup Light
4 grams Mint
1/4 cup leaves, whole Basil, Fresh
3 large Onions, Spring Or Scallions
2 tbsp Olive Oil
1.5 oz Light Soy Sauce

Recipe Directions for Chicken Eggplant Stirfry

  1. pulse the ginger, garlic, basil, mint, and 1/4 c. chicken broth. set aside.

  2. use 1 tbsp of olive oil to saute the peppers, onion, and eggplant till soft. put in a bowl and cover to keep warm.

  3. use 1 tbsp of olive oil to saute herb mix from step 1. add the soy sauce and chicken (cut in strips first) then cook till meat is done.

  4. add the rest of the chicken broth and bring to a boil.

  5. return the vegetables to the pan and mix it all together.

  6. serve over rice if you wish (not included).
