Eggplant baked with chicken and tomato sauce.

Recipe Ingredients for chicken & eggplant parmesan

1 lb chicken thighs, boneless, skinless
14 oz. diced tomatoes
1 medium onion, chopped
1 t basil
1 t oregano
2 cups tomato sauce
1 medium eggplant
1/4 cup parmesan cheese, grated
1/2 tablespoon olive oil

Recipe Directions for chicken & eggplant parmesan

  1. Slice the eggplant, salt it, and leave it in a colander for twenty minutes or so. Rinse well and pat dry.

  2. Saute the onion in a little olive oil. Add herbs, tomato sauce and diced tomatoes. Bring sauce to a slow boil, then simmer for ten minutes or so.

  3. Cut the chicken into chunks and saute in oil.

  4. Put about 1/3 cup of sauce in the bottom of a 13x9 in. pan (I usually spray with cooking spray). Layer eggplant, then chicken, then eggplant, put the rest of the sauce in, and the parmesan cheese on top.

  5. Bake at 350 for 30-40 minutes or until eggplant is soft.
