Recipe Ingredients for Chicken and Eggplant Parmesan

4 oz. chicken breast
1/2 large eggplant
2 c. panko
1 tsp. salt
1 egg
1 cooking spray

Recipe Directions for Chicken and Eggplant Parmesan

  1. Place chicken in a freezer bag; flatten to inch thickness. Dip chicken in egg, and dip in panko.

  2. Spray olive oil spray in large skillet or frypan, cook chicken over medium-high heat until browned on both sides. Spoon pasta/tomato sauce over chicken; gently bring to a boil. Cover, reduce heat, and simmer for approximately 10 minutes.

  3. Sprinkle with cheese; cover and simmer five additional minutes or so.
