classic chicken and eggplant parmesan

Recipe Ingredients for Chicken/Eggplant Parm

8 oz spaghetti noodles
3 cups tomato sauce
1 lb chicken
1 eggplant
2 tbsp olive oil
1/2 cup provolone cheese
1/4 cup parmesan
2 eggs
1 cup breadcrumbs
1/4 cup flour

Recipe Directions for Chicken/Eggplant Parm

  1. Coat chicken and eggplant slices with flour/egg/breadcrumbs. Light fry 3-5 minutes on each side. Add to baking dish with 1/2 can tomoto sauce. Bake at 350 degrees for 30-35 minutes.

  2. In the meantime, boil pasta noodles and heat remaining sauce.
