16 oz Boneless, Skinless Chicken Breast, frozen
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1 medium Yellow Hothouse Bell Pepper
1 medium Orange Hothouse Bell Pepper
1.5 cup Leeks, (Bulb And Lower Leaf-portion)
4 clove Garlic
5 slices (1" dia) Ginger Root
0.5 serving Costco Organic Free Range Chicken Broth
2 serving Romeo Grape Seed Oil (1 tbsp)
1/4 cup leaves, whole Basil, Fresh
3 cup Rice, Brown, Medium-grain, Cooked
2 Teaspoon Soy Light Sauce

Recipe Directions for Chicken Eggplant over Rice

Blend together leeks, ginger, bail, garlic with 1/4 cup chicken broth. Stir fry eggplant and peppers. Stir fry chicken. Add ingredients together with 1/4 cup chicken broth. Stir well and bring to a boil. Serve over rice.
