Recipe Ingredients for Chicken and Eggplant Over Rice

500 grams 6 cups eggplant cubed
672 grams 6 bonless skinless chicken thighs
320 grams 2 cups chopped onion
119 grams 1 medium chopped bellpepper
28 grams 2 tablespoons EVOO
125 grams 1/2cup bertolli tomato basil sauce
1265 grams 8 cups cooked rice
12 grams 4 cloves garlic

Recipe Directions for Chicken and Eggplant Over Rice

  1. Coat chicken thighs with EVOO and brown

  2. Once chicken is brown add eggplant, onion, bellpepper, tomato basil sauce, garlic, 1 cup of water and simmer until eggplant completly breaks down

  3. You will have to continously add water during the simmering process you want the chicken and eggplant mixture to be soupy but not too thin

  4. add salt, pepper and italian seasoning to taste

  5. divide finished chicken and eggplant into 8 portions and serve each portion over a cup of cooked rice
