Recipe Ingredients for Chicken and Eggplant Casserole

1 medium unpeeled raw Eggplant
1.5 medium raw Bell Pepper Red
1 medium raw Onion Yellow
19 oz (raw) Chicken
0.5 cup, diced Mushrooms, Portabella
1 oz Mozzarella, Part Skim Milk Cheese
3 tbsp Parmesan, Grated Cheese

Recipe Directions for Chicken and Eggplant Casserole

  1. Arrange the eggplant slices in a single layer on a nonstick baking sheet. Mist the eggplant slices with olive oil spray. Broil 4" from the heat for 2 minutes or until golden brown. Turn eggplant over mist with olive oil spray. Sprinkle with Parmesan or Asiago cheese Broil for 1 min or until golden. Set aside.

  2. Heat a nonstick skillet coated with olive oil spray over medium high heat for 1 minutes. Add the chicken and cook, stirring often, for 5 minutes or until no longer pink. Add the tomatoes with the juices, onion, bell pepper, mushrooms, Italian seasonings and black pepper. Bring to boil. Reduce the heat to low and simmer for 5 minutes

  3. Preheat Oven to 375o

  4. Coat a 8" baking dish. Arrange 6 eggplant slices in the bottom of the dish. Top with the chicken mixture. Arrange the remaining 6 eggplant slices over the chicken and sprinkle with mozzarella cheese

  5. Cover with foil and bake for 30 min
