Great in a sandwich or on its own, the whole family loves this when made with cut up rotisserie chicken. Even better with diced celery and/or chopped pickle added, which lowers the caloric count.

Recipe Ingredients for Chicken and Egg Salad

3 cups chicken, cubed
6 eggs, boiled
1/4 onion
1/2 cup light mayonnaise

Recipe Directions for Chicken and Egg Salad

Best to use cut up rotisserie chicken. Dice boiled eggs and chop onion, then add to chicken. Stir in mayonnaise, mixing well.
