This is an easy recipe and so good on a cold winter night. 1 1/2 cup servings for 7 Weight Watchers PP

Recipe Ingredients for Chicken and Dumplings

24 oz chicken breast tenders
8 cups water
1 tsp salt
1/2 tsp black pepper
1/4 cup light butter
1 tsp chicken bouillon
2 cups self rising flour
1/2 cup Fat-Free Buttermilk
3 tablespoons shortening

Recipe Directions for Chicken and Dumplings

  1. Put water, chicken and salt and pepper in a large boiler. Boil chicken until tender about 15 to 20 minutes. Take chicken out and set aside to cool. Leave the broth in the boiler.

  2. Put flour in a bowl, blend in shortening. Add buttermilk and mix until the dough forms a ball. It it is a little dry add 2 or 3 tablespoons of chicken broth. Put half of the dough on a floured board and roll to desired thinness (I like mine very thin) cut into 1 1/2 squares with a pizza cutter and put on a plate. Do the same with the other half of the dough.

  3. To the chicken broth add butter and bouillon and bring to a full boil. Add dumplings one at a time and boil 10 minutes. Tear chicken tenders into small pieces and add to dumplings and cook 5 more minutes. Enjoy!
