A delicious adaptation of an old standard.

Recipe Ingredients for Chicken and Dumplings

20 oz. Chicken
1 tsp vegetable oil
1 cup green pepper
2 cups carrots
6 cups low sodium chicken stock
1 tsp. Salt, Table
1/2 tsp pepper
1 tsp oregano
1 tsp thyme
2 tsp basil
2 tbsp corn starch
1/2 cup water
2 cups celery
1 cup onion
1 lb. self rising flour
5 oz crisco
2 cups skim milk

Recipe Directions for Chicken and Dumplings

  1. Preheat oven to 400 degrees.

  2. Chop chicken into very small pieces & fry in dutch oven on medium heat until done.

  3. Add in green pepper and carrots. Cook 4-6 minutes on medium high or until carrots are just slightly soft.

  4. Add broth, herbs, salt and pepper. Bring to a boil.

  5. In a glass measuring cup, mix water and cornstarch. Add to pot and mix until slightly thickened.

  6. Remove from heat and add onion & celery. Place mixture into large casarole dish or enamel roasting pan.

  7. In a mixing bowl, add flour and shortening. Cut together until shortening almost disappears. Add in milk and mix until all absorbed. It should be a little dry, not too sticky, but should hold together.

  8. Use a disher to divide into 16 small balls. Make sure they hold together, then flatten slightly and place on top of meat & veg mixture in cooking dish. Bake in oven for 30 minutes. Dumplings should be nicely browned.

  9. Serves 8
