A rich, gravy-like soup with chicken, vegetables and fluffy dumplings.

Recipe Ingredients for Chicken & Dumplings

2 fillet Boneless Skinless Breast Fillets
1 cup, chopped Carrots
2 cup, diced Celery
1 cup, chopped Onions
5 medium Mushrooms
1 cup Beans, Snap, Green
3 cup Chicken Stock
0.75 cup Whole Milk
2 tsp Baking Powder
2 tbsp Parsley
1 1tsp Olive Oil
2 cup Wheat Flour, White, All-purpose, Enriched, Unbleached

Recipe Directions for Chicken & Dumplings

  1. Cut up vegetables and chicken into bite-sized pieces and saute in the olive oil for five minutes. Sprinkle 1/2 cup of the flour onto the veg and chicken and stir. Cook, stirring, for five minutes.

  2. Add sherry, stirring and scraping the cooked-on flour with a wooden spoon. Add the chicken stock and stir to dissolve the flour.

  3. Make the dumpling dough by mixing together the remaining 1.5 cups flour, baking powder, milk and herbs. stir to combine, then use an ice cream scoop or two spoons to make 12 dumplings (scoop directly onto the soup). Cover and simmer for 15 minutes.
