Chicken and Dumplings Recipe

Classic chicken stew with dumplings. Try using low sodium chicken broth for a healthier option. You can also replace the butter with a vegetable oil to reduce the amount of saturated fats.

Recipe Ingredients for Chicken and Dumplings

3 tablespoons butter
1/4 cup flour
1 large onion, diced
4 ribs celery, diced
4 large carrots, cut into pieces
14 1/2 oz chicken broth
2 cups water
10 oz boneless skinless chicken thighs
10 oz peas
1/4 cup flour
2 tablespoons skim milk
3/4 teaspoon dill
3/4 teaspoon baking powder

Recipe Directions for Chicken and Dumplings

  1. Saute carrots, onion and celery in butter until onion softens slightly (cook covered for best result, about 3 minutes)

  2. Add 1/4 cup flour and cook about 1/2 minute. Stir in chicken broth and water, scraping up flour from bottom of pot.

  3. Bring to boil and add chicken thighs, cook 25 minutes. and then add peas. Return to boil for 10 minutes, stirring occasionally.

  4. In a separate bowl, combine 1/4 cup flour, baking powder, dill and milk and drop by tablespoons into simmering pot. Cover, reduce heat and simmer until dumplings are cooked through - about 15 minutes.
