Homemade Chicken and Dumplings soup that's easy to make!

Recipe Ingredients for Chicken & Dumplings

4 serving Cooking Stock
1 serving diced large yellow onion (1 cup)
3 serving boiled chicken, skinless, diced, de-boned (1 cup)
2 small (5-1/2" long) Carrots
2 stalk, large (11"-12" long) Celery
2 cup Gold Medal All Purpose Flour
3 tbsp Shortening
0.25 tsp Baking Soda
0.75 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
2 tsp Salt
0.5 tsp Spices Ground Black Pepper
0.25 cup Unsweetened Almond

Recipe Directions for Chicken & Dumplings

  1. Skin whole chicken, boil in chicken broth and water. Skim foam off water as it begins to boil. Add diced veggies. simmer 50-60 mins. Pull chicken out and set on cutting board to cool. Place pot in fridge to cool. Once cool, skim fat off top. Once chicken is cool, pull meat from bone, discard carcass.

  2. Dumplings:

  3. Measure out flour, salt and baking powder into bowl. Add shortening and cut together with 2 knives until it becomes texture of coarse powder. Add buttermilk and mix up just enough to come together. Flour countertop and knead the dough mixture 4-5 times.

  4. Bring pot of broth back to boil on stove. Add milk. Add chicken pieces. Tear off 1/2" pieces from the kneaded dough and toss in boiling water one by one. Stir occasionally for 8-10 mins. Makes 12 cups.
