Fast and low-cal chicken & dumplings

Recipe Ingredients for Chicken & Dumplings

2 c. chicken breast, chopped
2 T. vegetable oil
7 oz. onions, chopped
14 oz. low-sodium chicken broth
1 t. poultry seasoning
1 t. salt
1/2 t. pepper
14 oz. carrots, sliced thin
14 oz. celery, thinly chopped
1 refrigerated buttermilk biscuits (16.3oz)
1 can (10.5oz) chicken gravy

Recipe Directions for Chicken & Dumplings

  1. In a small frying pan, saute onion in vegetable oil until tender.

  2. In a large pot, add broth, seasoning, salt, pepper, and veggies. Reduce to simmer for 10mins. Add chicken.

  3. Remove biscuits from can and roll on lightly floured surface to 1/4-in thick. Cut each biscuit into 4 pieces.

  4. Skim top of of pot to remove any "scum" that may have formed. Stir in chicken gravy.

  5. Stir in dumplings, a few at a time. Once all dumplings are added, cover with a tight fitting lid and cook an additional 10mins.
