Recipe Ingredients for chicken and dumplings

2 lb chicken, dark meat
1 chicken breast
1/2 cup frozen corn
1/2 cup frozen green beans
1/2 cup frozen carrot
1/2 cup frozen peas
1 1/2 cup flour
1/4 cup 2% milk
3 tbsp butter
3 tsp baking powder
2 tsp salt
1 tsp pepper
1 tbsp chopped rosemary

Recipe Directions for chicken and dumplings

  1. Start with whole chicken, wash and dry

  2. Remove whole legs, cut in half to separate thigh and drumstick

  3. Remove wings, drumsticks

  4. In a large, deep pot, preferrably a dutch oven or other heavy pot, braise chicken lightly over high heat until everything starts to brown

  5. Add water, herbs but not salt

  6. simmer over low heat for 3-4 hours

  7. remove bones, skin, cartiladge, strain if necessary, add frozen veg, bring back up to simmering heat.

  8. Assemble dumplings, cut room temp butter into the flour, with some salt and pepper and baking soda, When formed, pinch or cut off tablespoon sized dumplings and drop in soup - let cook for 10-15 mins
