Chicken and dumplings with onion, peas and mushrooms. Recipe adapted from one shown on Today Show (8-2-09) to be more cheap-person, fast cooker minded. :)

Recipe Ingredients for Chicken and Dumplings, Adapted from Today Show


Chicken:
1 tsp salt
6 oz. boneless skinless chicken breasts, cut into pieces
1 tablespoons extra-virgin olive oil
1/2 onion, minced
2 cloves garlic, minced
1 teaspoon crushed red pepper flakes
2 cups organic low sodium chicken broth
1 cup fresh mushrooms, halved lengthwise
1 tsp thyme
1 tsp sage
1/2 cup peas
1 tomato, peeled, seeded, and diced
2 tablespoons unsalted butter

Dumplings:
1/8 tsp salt
1 cup ricotta cheese, fat free
3 egg yolks
1 pinch nutmeg
1/3 cup flour
1 tsp oregano

Recipe Directions for Chicken and Dumplings, Adapted from Today Show

  1. Saute chicken in deep pan with heated olive oil until no longer pink.

  2. Add onions, garlic and pepper flakes and cook until chicken is done.

  3. Stir in chicken broth and simmer until liquid reduces by half.

  4. Add mushrooms, peas, tomatoes and herbs and cover over low heat while cooking dumplings.

  5. Bring a medium pot of water to hard boil, then reduce heat to come to a light boil.

  6. Mix together ricotta, egg yolks, nutmeg and salt. Gradually stir in just enough flour to form a soft dough. "Test the dumpling dough before adding more flour by dropping a small spoonful of the dough into the boiling water. Once the dumpling floats to the surface, let it poach for 45 seconds. If the dumpling breaks apart while cooking, you'll need to add a bit more flour to the dough and test again. Just don't overwork the dough, or it'll become tough."

  7. Drop the remaining dough in water once right consistency is achieved. Poach for 45 seconds and then add to chicken mixture.

  8. Done!
