Recipe Ingredients for Chicken Divan

1 lb. broccoli florets
2 cups chicken broth
2 tbs. cornstarch
1/4 cup cold water
1/2 cup nonfat plain yogurt
1 tbs low-sodium soy sauce
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp pepper
1/2 tsp dried basil
2 cups rice, cooked
1 cups chicken, cooked and cubed
1/2 cup low-fat cheddar cheese

Recipe Directions for Chicken Divan

  1. Preheat oven to broil.

  2. Steam broccoli until crisp-tender.

  3. Heat chicken broth. Mix cornstarch and water and add to broth stirring in yogurt. Add soy sauce, oregano, salt, pepper and basil.

  4. Place brown rice on bottom of a casserole dish and to it add steamed broccoli. Pour half the sauce over the top; layerthe chicken on top. Add 1/4 cup cheese and the sauce and pour over the chicken.

  5. Sprinkle with remaining cheese and place under broiler until lightly browned.
