Chicken Broccoli and Cheese baked with Rice

Recipe Ingredients for Chicken Divan Casserole

1 tablespoon olive oil
12 oz chicken breasts
1/4 cup butter
4 tablespoons flour
2 cups chicken broth
1/2 cup whipping cream
3 cups rice
3 bunches of broccoli
1 onion
8 oz mushrooms
2 cups shredded cheddar cheese

Recipe Directions for Chicken Divan Casserole

  1. Cook rice

  2. steam broccoli

  3. season chix w/salt & pepper. brown chicken in olive oil; bake at 350 while assembling the rest of the casserole

  4. add butter to the same pan. Sautee onions in butter, then add mushroom till partially cooked through.

  5. add flour and make a roux

  6. add liquids to make sauce. You can add wine/sherry here if you want. Season with salt & pepper to taste

  7. add half the cheese to sauce

  8. shred chicken and assemble casserole. Start w/rice (add some chix broth if it seems dry), add broccoli, then shredded chix. Pour sauce on top. Finish with remaining cheese

  9. bake 20 to 30 minutes
