Chicken Dijon Stuffed Baked Potatoes

Recipe Ingredients for Chicken Dijon Stuffed Baked Potatoes

3 large baking potatoes
18 spears asparagus
10 oz chicken, white, canned, drained
1/4 cup sour cream, light
1 tablespoon Dijon mustard

Recipe Directions for Chicken Dijon Stuffed Baked Potatoes

  1. Scrub thoroughly and pierce with fork 3 or 4 times. Microwave on high for 8 minutes or until thoroughly cooked.

  2. Rinse asparagus and cut off ends. Broil for 3-4 minutes

  3. Place drained meat in bowl Add sour cream and mustard. Mix well. Microwave for 1-2 minutes.

  4. Cut potatoes in half. Spoon chicken mixture into middle of potatoes and top with asparagus.
