Recipe Ingredients for Chicken Diane

1 tsp olive oil
1/4 cup shallots, chopped
6 oz fresh mushrooms, sliced
230 grams (2 4oz skinless, boneless) chicken breast
1 tsp paprika
2 tsp chopped fresh chives
2 teaspoons dried parsley
1/4 cup chicken broth
2 oz dry vermouth
1 tbs Dijon mustard

Recipe Directions for Chicken Diane

  1. saute shallots and mushrooms-remove from pan

  2. sear chicken breasts until brown

  3. add mushrooms, shallots and herbs to chicken

  4. mix together broth, mustard and vermouth and pour over chicken

  5. reduce heat and simmer 20 minutes until sauce is reduced and chicken is cooked through
