Recipe Ingredients for Chicken Dhanshak

15 oz chicken thighs, boneless skinless
1/2 red onion, diced
2 tsp garlic, ground
2 tsp ginger, ground
1 tbsp tomato paste
1/2 potato
1 cup butternut squash, cubed
1/2 cup sweet potato, cubed
1/2 cup kale
1/2 cup turnip greens
1/2 cup eggplant, cubed
3 tbsp canola oil
1 tsp butter
1 1/2 tbsp red lentil
1 1/2 tbsp lentil
1 tsp salt
1 tbsp curry powder
1 tsp garam masala

Recipe Directions for Chicken Dhanshak

Saute onions in oil till translucent. Add tomato paste, ginger paste and garlic paste. Add dhanshak curry powder and stir till well blended. Add washed chicken pieces and stir till the pieces are coated with the spices. Add the washed lentils and vegetables. Stir so all the ingredients are properly mixed. Cook covered and on medium heat for about 2 minutes. Add 2 glasses of water and salt. Let simmer till the lentils, chicken and vegetables are fully cooked. Add the butter, cover and let simmer for 2 minutes. Turn heat off. Let sit for 5 minutes before serving over rice or Inidan Nan.
