Sweet, salty, and tart salad. Fat and saturated fat content here is actually high by about 1/3. Can't get it to list the proper low-fat cheese (Frigo Light String Cheese stick, sliced into medallions.)

Recipe Ingredients for Chicken & Date Salad

1 cup romaine lettuce, shredded
4 ounces (29g) chicken breast, oven roasted, fat free, chopped
16 g dates, chopped
85 g tomatoes - cherry
1/8 cup almonds, slivered
1/5 (152g) apple - gala, chopped
1/4 cup (28g) Mozzarella, Part skim - Crystal Farms Reduced Fat Shredded Cheese
1 tbsp honey
1 tbsp lime juice

Recipe Directions for Chicken & Date Salad

  1. For dressing, stir together honey and lime juice until well blended.

  2. Toss with remaining ingredients.
