Very crunchy, lower fat version. Very yummy!

Recipe Ingredients for Chicken Cutlets - America's Test Kitchen

1 1/2 cups panko
1 tablespoon olive oil
1/2 cup unbleached all-purpose flour
1 1/2 teaspoons garlic powder
3 large egg whites
1 tablespoon water
24 ounces boneless, skinless chicken breasts

Recipe Directions for Chicken Cutlets - America's Test Kitchen

  1. Adjust oven rack to middle position and heat oven to 475.

  2. Trim fat off chicken and cut in half to make cutlets.

  3. Combine panko and oil in 12-inch skillet and toast over medium heat, stirring often, until golden, about 10 minutes. Spread panko in shallow dish and cool slightly.

  4. In second shallow dish, combine flour, garlic powder, 1 T. salt and 1/2 t. pepper.

  5. In a third shallow dish, whisk egg whites and water together.

  6. Line a rimmed baking sheet with foil, place on wire rack and spray rack with vegetable oil spray.

  7. Pat chicken dry and season with salt and pepper. Lightly dredge cutlets in flour, shake off excess, dip in egg whites and finally coat with panko. Lay chicken on rack.

  8. Spray cutlets with vegetable oil spray.

  9. Bake about 15 minutes.
