Chicken Curry Soup Base Recipe

This is the base I use for Chicken Curry Soup. We use different types of Curry sauce, and each is different, so I did not include the sauce/seasoning. Please see note in instructions.

Recipe Ingredients for Chicken Curry Soup Base

1/2 red bell pepper
1/2 green bell pepper
1 cup celery, chopped
1/2 medium yellow onion, chopped
1 clove garlic, fresh
4 roma tomatoes
2 1/2 c chicken stock, low sodium
2 chicken breast, cooked, chopped

Recipe Directions for Chicken Curry Soup Base

  1. Please note: This recipe is specifically written for making in a VITAMIX.

  2. Also note: This recipe does NOT INCLUDE THE CURRY SAUCE OR SEASONING. Different types and brands of curry have different calorie counts, the calorie content for this recipe includes vegetables, stock and chicken ONLY. You will have to add the calorie count for the sauce of your choosing.

  3. Remove stems from peppers, do not remove seeds. Place in the Vitamix container, add celery, onion, garlic, tomatoes and chicken stock. This goes faster if you heat the chicken stock first, but you can cook it in the Vitamix. Turn vitamix variable speed to 10, then turn to high, puree vegetables and stock for 2 minutes, then add curry sauce through top of Vitamix while still spinning. Continue the puree for at least 4 minutes or until it is hot enough for serving.

  4. Pour the mixture into bowls, then add chopped chicken.
