Recipe Ingredients for Chicken Curry Salad (light recipe)

1 medium red apple (chopped)
9 ounce chicken breast halves
1 cup of water
1/2 teaspoon salt
1/2 cup mayonnaise
1/4 cup organic milk
2 teaspoons curry powder
1 cup cooked brown rice
1 1/2 cups diced celery
1/2 cup seedless grapes
1 cup romaine lettuce (chopped)

Recipe Directions for Chicken Curry Salad (light recipe)

  1. Add the cup of water and 1/4 of teaspoon of salt to a saucepan. Add the chicken and bring to a boil. Reduce the heat and simmer until chicken is tender and thoroughly cooked. Drain chicken and allow to cool. Cut chicken into bite-sized pieces.

  2. On a separate bowl, combine the 1/2 cup mayonnaise the milk, curry powder and 1/4 teaspoon of salt.

  3. Add chicken, apples, wild rice, celery and grapes to the curry/mayonnaise mixture. Mix well.

  4. Allow to chill for 1 to 4 hours.

  5. Serve salad on top of romaine lettuce
