This is a rice cooker recipe scaled to fit a 5.5 cup rice cooker. I adapted it, cutting out 2 T of butter completely and using olive oil instead of sesame oil.

Recipe Ingredients for Chicken Curry Rice Pilaf

1 lb chicken breasts
2 tbs olive oil
2 large onions, sliced
1 tsp sugar
1 clove garlic, minced
2 tsp curry powder
1 turmeric to taste
1 pinch saffron (optional)
1 1/2 cups raw basmati rice
1 cup vegetable broth (chicken flavor)
1 1/3 cups water
1/3 cup raisins
2/3 cup peas, frozen
1/3 cup slivered almonds, toasted
1 salt and pepper to taste

Recipe Directions for Chicken Curry Rice Pilaf

  1. Cube chicken. Heat oil in cooker or in a frying pan and saute the chicken until cooked through; remove to plate.

  2. Saute onions with sugar in the frying pan or cooker until browned. Add garlic at the end of that cooking time.

  3. Add curry powder and turmeric and stir to release flavors.

  4. Add raw rice and stir 2-3 minutes. (if this isn't being done in the cooker pot, add it to the pot when done.)

  5. Slowly add the broth and water (for firmer rice, use a little less water) and stir to combine.

  6. Stir in cooked chicken, raisins, peas, and almonds. Bring to boil at medium heat.

  7. At this point adjust the curry powder to taste. Then press Cook on the rice setting.

  8. Season to taste with salt and pepper when done.
