Recipe Ingredients for Chicken Curry

2 tbsp curry powder
1 tsp ginger, ground
1/2 tsp cinnamon, ground
1/4 tsp cloves, ground
1/4 tsp cayenne
2 tbsp peanut oil
1 onion, large, chopped
1 tsp garlic powder
13 1/2 oz coconut milk
14 1/2 oz tomato diced
1 1/2 cup chicken, lean, no skin, breast only
8 oz chicken stock, no fat

Recipe Directions for Chicken Curry

  1. Saute onion in oil, add garlic and spices toast until fragrant

  2. Add chicken cook & stir until coated with spices

  3. Add coconut milk, tomatos and broth

  4. Bring to a simmer and cook uncovered until flavours blend and stew is thick

  5. Serve over cooked basmati rice
