Makes 12 - 1/2 cup servings Serve over rice with toppings: Sweet pickles (chopped) Crushed pineapple (drained) Crumbled bacon or prosciutto. Peanuts. Dried fruit (chopped). Hard boiled eggs. Cooked onion rings.

Recipe Ingredients for Chicken Curry

1 medium onion
2 cloves garlic
4 cups skim milk
1 1/2 pounds boneless skinless chicken breast
1/4 cup white flour
2 tbsp olive oil
3 tbsp cornstarch
4 tbsp curry powder

Recipe Directions for Chicken Curry

  1. Saute onion and garlic in oil.

  2. Add Chicken and 1/2 curry powder and cook chicken through.

  3. Remove chicken and add flour and cook lightly.

  4. Add milk and remaining curry powder and cook until simmering.

  5. Return chicken to mixture and simmer a couple of minutes.

  6. Add cornstarch to 1/8 cup water and add to mixture. Cook until thickened.
