Delicious and healthy chicken curry. I eat it without rice, but feel free to add rice and/or steamed veggies. sometimes need salt depending on my mood. :)

Recipe Ingredients for Chicken Curry

2 cup,+chopped+or+diced chicken breasts
1 c chopped raw onion
1 tbsp olive oil
3 tsp curry powder
1/2 tsp turmeric
1 cayenne pepper to taste (about 1/8 tsp)
1 dash black pepper
1 c fat free plain yogurt

Recipe Directions for Chicken Curry

  1. Saute onions in olive oil until translucent

  2. Add in chicken and cook until chicken is no longer pink

  3. Add in yogurt, curry powder, tumeric, pepper, and cayenne pepper.

  4. Simmer over low heat for about 10 minutes.

  5. Serve over rice of vegetables or by itself!
