Simple, savory chicken curry with rice. Can be made with 1c dry lentils rehydrated.

Recipe Ingredients for Chicken Curry

20 oz Boneless Skinless Chicken Breast Cutlets Raised Without Antibiotics
2.5 tbsp Vegetable Oil, Canola
1.5 cup Rice, White, Long-grain, Regular
1 medium Yellow Onions
1.5 cup Frozen Green Peas
1.3 cup Frozen Green Peas

Recipe Directions for Chicken Curry

  1. Start cooking rice in 3c water. Add salt and some oil if desired.

  2. In skillet, saute entire chopped onion in about a Tbsp of oil. Cover skillet and sweat the onions for at least 3-5 minutes.

  3. Add chopped chicken to onions, and cook 3 minutes, covered.

  4. Add spices on top of everything and mix. Spice mix: 1 heaping Tbsp curry powder, 1 1/2 tsp curry powder, 1 tsp cinnamon, 1 tsp coriander (opt), 1/2-1 tsp chili powder, 1 tsp salt and 1/2 -1 tsp black pepper.

  5. Stir in, cover and saute another 3 minutes or so.

  6. Add about 2 cups water and at least half a bouillon cube, if desired. Stir everything up, and, if desired, add rice to chicken at whatever state it's in to simmer rice in spices and broth. Add peas, stir in, and cover for 15-30 minutes.
