Mom's chicken curry made with chicken breast, low-fat milk, and low fat spread.

Recipe Ingredients for Chicken Curry

320 g chicken breast
2 carrots
1 small onion, diced
2 tbls country crock
2 tbls flour
2 stalks celery, diced
1 small potato, cubed
2 tbls curry powder
1 tsp salt
480 g chicken broth
2 cups milk

Recipe Directions for Chicken Curry

Saute onion, carrots, and celery in spread for about 4 minutes until onion is translucent. Add flour and saute for another couple of minutes. Add chicken broth slowly while constanly stiring to avoid lumps then add milk, curry powder, salt, and cooked chicken breast. Bring to a boil and turn down to simmer. Simmer until carrots are tender and add potato. Simmer until potatos are cooked. Serve over rice.
