Easy one pan chicken curry uses leftover chicken and goes over rice.

Recipe Ingredients for Chicken Curry

1/2 red bell pepper, cubed
1/2 yellow bell pepper, cubed
1/2 onion
2 tbsp olive oil
3 tsp garlic, minced
1 cup yams, cubed
1 cup chicken, cooked and shredded
1/2 tsp curry powder
1/8 tsp paprika
1/4 tsp chili powder
1/4 tsp cayenne powder
1/8 tsp turmeric
1 cups water
1/2 cup plain fat-free yogurt

Recipe Directions for Chicken Curry

  1. Heat olive oil in skillet. Add yellow and red peppers and onion and saute until soft. Add garlic and yams. Saute about 30 seconds more.

  2. Add 1 cup water, yams, and spices. Simmer, covered, until yams are soft, adding water as needed.

  3. Add cooked and shredded chicken. Stir in yogurt and cook about 2 more minutes until heated through.

  4. Serve over basmati rice.
