Spicy, flavorful and out of the ordinary chicken entree

Recipe Ingredients for Chicken Curry

300 g chicken thighs, meat only
3 tbsp vegetable oil
2 tbsp sour cream
3 medium tomatoes, diced
3 medium carrots, diced
2 medium potatoes, diced
1/4 cauliflower head
1 small onion, diced
3 tbsp fresh ginger, minced
6 garlic cloves
1/4 tsp salt
1/8 tsp black pepper
2 tsp curry powder
3 serrano peppers, diced
15 ounce Petite Cut Diced Tomatoes

Recipe Directions for Chicken Curry

  1. Rub raw chicken thighs with 1 tsp curry powder, salt, pepper, 3 minced garlic cloves, 1 tsp minced ginger, sour cream and 1 tsp vegetable oil. Let rest in fridge at least 30 min.

  2. Heat 2 remaining tsp vegetable oil in pan. Add onion and cook till translucent. Add remaining garlic and ginger and serrano pepper. Cook few more min. Add curry powder, cook till oil gets yellowish brown. Add carrots and potatoes and cook a few min.

  3. Add chicken thighs and sear/ brown.

  4. Add diced tomatoes with juice plus some water to deglaze pan. Add cauliflower and remaining tomatoes. Add more water or chicken stock if want more juicy. Cook till potatoes and carrots are tender, about 20-30 min. Serve over steamed basmati rice or with pita bread.
