Lower calorie Indian-style chicken curry recipe

Recipe Ingredients for Chicken Curry

3 cloves garlic, minced
1 medium onion, minced
2 tbsp. ginger root, grated
5 tbsp. curry powder
3 tbsp. cumin
5 tbsp. water
2 tbsp. olive oil
1 cup plain yogurt
1 cup lite coconut milk
1 cup non-fat milk
1 cup water
2 large potatoes, cubed
4 cups chicken breasts, cubed
1/8 tsp. salt
1/8 tsp. pepper

Recipe Directions for Chicken Curry

  1. In Dutch Oven, saute onion and garlic in 1/2 T. olive oil. Remove from pan.

  2. Brown chicken in 1 T olive oil. Remove from pan.

  3. Brown potatoes in 1/2 T. olive oil.

  4. Add remaining ingredients and simmer until potatoes are done, about 30 - 40 minutes.
