Chicken curry made with chicken breast and vegetables.

Recipe Ingredients for Chicken Curry

2 1/2 cups chicken breast
1 potato, russet, cubed
3 carrots
3 stalks celery
2 cups low sodium chicken broth
2 cups lowfat milk
2 tbls butter
2 tbls flour
1/4 onion, chopped
3 tbls curry powder

Recipe Directions for Chicken Curry

Melt butter in pan add chopped onion and sweat over medium heat for about 2 minutes. Add flour and cood over medium-low heat for another 3-4 minutes stirring constantly. Whisk in chicken broth slowly then add milk and blend mixture well. Add carrots and celerythen simmer over low heat for 15 minutes, stirring occassionaly. Add curry powder, chicken, and potatoes. Simmer until potatoes are tender and serve over rice.
