To make this recipe feed 4 just double the meat and veggies. Can add 2 green onions.

Recipe Ingredients for Chicken Curry

1 tbsp cornstarch
2 tsp curry powder
1/4 tsp crushed red pepper flakes
1 cup low sodium chicken broth
1 tbsp reduced sodium soy sauce
1 cup chicken, diced
1/2 cup sliced carrots
1 cup frozen broccoli
1 clove garlic

Recipe Directions for Chicken Curry

  1. Combine cornstarch, curry powder, red pepper, chicken broth and soy sauce in a small bowl and stir until smooth. Set aside.

  2. Cook diced chicken in a 10 in. skillet with a little olive oil (or cooking spray) and set aside, keeping warm.

  3. In the same skillet sauté carrots and garlic for 1 min.

  4. Add broccoli and cook, stirring often, for 2 more minutes.

  5. Optional - add onion and cook for 2 minutes.

  6. Stir curry sauce and add to veggies along with the chicken.

  7. Bring to a boil and reduce to desired consistency.

  8. Serve over rice.
