Recipe Ingredients for Chicken Curry

1 2/5 lb boneless skinless chicken breast
2 tsp ginger
3 cloves garlic, minced
1 tbsp onion, minced
14 oz fat free chicken broth
3 tbsp curry paste
3 tbsp mango chutney
2 tbsp olive oil

Recipe Directions for Chicken Curry

  1. In a large skillet over med-high heat, brown the chicken for 4 mins on each side in the oil. Remove chicken from pan and set aside.

  2. Add onion, ginger and garlic - Saute for 3 mins. Add broth and stir the pan. Add curry paste and raisins. Return chicken to pan and heat to a boil.

  3. Stir the pan and reduce heat to med-low. Add in chutney to thicken and sweeten.

  4. Simmer for 5-10 mins to desired thickness
