Use a stick of cinnamon, 2 bay leaves and 2 cloves; and a bunch of curry spices which I am not sure if it is the same of curry powder.

Recipe Ingredients for Chicken Curry


Ingredients:
1 1/2 lb chicken, wash & cut into pieces
1/4 cup green peas
3 baby carrot, cut into thin strips
2 small potato, boiled and peeled
2 onion, chopped
1 tbsp ginger, about 1 inch grated
5 cloves garlic
2 hot peppers
1 2/3 cup coconut milk

Spices:
1 tsp ground cinnamon, use one cinnamon stick
2 tsp bay leaves
1/2 tsp ground cloves, use 2 cloves
1 tsp black peppercorns
1/2 tsp turmeric
1/4 tsp Garam masala powder
1/2 tsp mustard seeds
2 tbsp Ghee
2 tbsp oil
1 tbsp curry, curry leaves (optional)
1 tsp salt

Recipe Directions for Chicken Curry

  1. Grind the ginger, peppercorns, turmeric powder, onions and green chilies to make a coarse paste.

  2. Heat oil and ghee in a large pan and add mustard seeds. When it pops add cinnamon, bay leaves & cloves. When it turns brown add garlic and curry leaves.

  3. After a few seconds add the onion, ginger and chili paste. Fry for a couple of minutes. Then add the chicken pieces and fry. Add potatoes, carrots, garam masala and salt.

  4. Cover the pan and cook for 5 minutes.

  5. Then pour the coconut milk and add the green peas. Cover and cook until the chicken is fully cooked.
