A simple chicken curry recipe. Serves 4.

Recipe Ingredients for Chicken Curry

1 tbsp Vegetable Oil
1 Green Bell Pepper, diced
1/2 large Onion, diced
1/2 lb Chicken Breast, cubed
14 fl oz Coconut Milk
1 cup White Rice

Recipe Directions for Chicken Curry

  1. Prepare the rice.

  2. Dice the pepper and onion. Fry in a frying pan in the oil.

  3. Cube the chicken into approximately 1 inch cubes. Fry with the vegetables.

  4. Once chicken is cooked, pour the can of coconut milk into frying pan.

  5. Stir in curry paste. Adjust for desired flavor. Can substitute for curry powder.

  6. Simmer for a few minutes until the soup is warm.

  7. Serve over rice.
