Easy one dish chicken meal w/ a creamy curry flavored yogurt sauce (fresh cilantro is optional)

Recipe Ingredients for Chicken Curry

2 tbsp olive oil
1 lb chicken breast meat
1/2 tsp salt
1/2 tsp pepper
1 onion, diced
1 green bell pepper, diced
3/4 cup 1% milk
1 tbsp cornstarch
3 tsp curry powder
1 tsp splenda
9 oz Broccoli, Cauliflower & Carrots
6 oz Greek Yogurt

Recipe Directions for Chicken Curry

  1. Heat oil in 12" skillet over med heat.

  2. Sprinkle chicken w/ salt & pepper, cook chciken

  3. Add onion & bell pepper, cook for 8 to 10 min, stirring occasionally.

  4. In a measuring cup, mix milk, cornstarch, curry powder and splenda.

  5. Stir mixture into the skillet, add frozen veggies, add yogurt, cook over low heat, stirring occasionally.

  6. serve over rice.
