Wonderful aromatic dish that is good especially on those rainy winter nights.

Recipe Ingredients for Chicken Curry with potatoes and cocoanut milk

3 cup,+chopped+or+diced skinless chicken breast
13 oz coconut milk
3 russet potatoes
1 tomato
1 onion
3 tsp curry
4 cloves garlic

Recipe Directions for Chicken Curry with potatoes and cocoanut milk

Saute onions and garlic in a small amount of oil of your choice. Add curry, and then tomatoes. Incorporate well. Add potatoes and cocoanut milk, then chicken. You can add whole breast separating them with a fork once the dish has finished cooking, or you can dice the chicken before adding. It's up to you. Cook for about an hour until potatoes are tender. Serve over rice. Some people add raisins, as well as a half a cup of sweet apples of your choice.
