Spicy chicken curry. A little high in calories, but worth it.

Recipe Ingredients for Chicken curry w/lentils and peas

1 1/2 cups cooked lentils
2 cup,+chopped+or+diced chicken breast
3/4 cup unsweetened coconut milk
1/2 cup frozen peas
1 tablespoon grapeseed oil
1 tablespoon rice vinegar
1 teaspoon Curry Powder

Recipe Directions for Chicken curry w/lentils and peas

  1. Divide cooked lentils between 2 bowls.

  2. While lentils cook, add all other ingredients except peas and coconut milk to hot wok. Stir fry until chicken is just cooked through.

  3. Add peas and coconut milk. Cook, stirring constantly until peas and coconut milk are hot. Spoon over lentils.
