Recipe Ingredients for Chicken curry dinner

4 oz Chicken, Breast, Meat Only
1 medium (2-1/2" dia) Onions
5 slices (1" dia) Ginger Root
1 NLEA serving Carrots, Baby
1 cup Soup, Chicken Broth
3 tbsp Coconut Milk
1 lemon yields Lemon Juice
2 tbsp Curry Powder

Recipe Directions for Chicken curry dinner

  1. Shred the chicken. Peel and trim the onions and carrots, and slice thinly. Add to a 10" non-stick pan with lid with 1/2 cup chicken broth. Cover the pan, bring to a boil then reduce to simmer and cook until onions and carrots are softened, and chicken broth has reduced.

  2. Grate the ginger and garlic, then add to the pan with the EVO and curry powder. Saute on low heat for about 2 minutes until aromatic. Add chicken broth, coconut milk and chicken. Bring to a low boil and heat the chicken through. Serve. Can be made ahead and re-heated with no ill effects.
