Chicken Cuban Recipe

A pretty far cry from an actual Cubano, but helps satisfy the craving in a healthier way :)

Recipe Ingredients for Chicken Cuban

4 oz chicken breast, (at least 4 thinly sliced cutlets)
1/8 tsp black pepper
2 tbsp olive oil, divided
2 tbsp Dijon mustard
8 slices rye bread
4 oz Alpine-Lace Swiss cheese
8 oz low sodium ham
4 oz kosher dills

Recipe Directions for Chicken Cuban

  1. Season chicken well with salt and pepper and bake at 450 degrees until internal temperature of each breast reads at least 160 degrees.

  2. Let chicken rest 5 minutes and then slice into 1/4 slices.

  3. Assemble each sandwich with sliced chicken, ham, pickle, mustard and swiss.

  4. Grill sandwiches on griddle pan or in panini grill. (If using a pan, press the sandwiches with another skillet or weighted baking sheet).

  5. Serve immediately. Enjoy! :)
