Chicken & Cruciferous Vegetable Soup .

Recipe Ingredients for Chicken & Cruciferous Vegetable Soup

5 pounds of Shredded Chicken (freshly boiled, preferably ? preserve stock)
1 cup Carrots, chopped into small spoon-sized pieces
1 cup Celery, chopped into small spoon-sized pieces
1 cup Cauliflower, broken into small spoon-sized pieces
1 cup Broccoli, broken into small spoon-sized pieces (include stems)
1 cup Green Cabbage, chopped into small spoon-sized pieces
1 cup Red Cabbage, chopped into small spoon-sized pieces
1 cup Asparagus, chopped into small spoon-sized pieces
1 cup Bell Pepper (Red, Orange or Yellow), chopped into small spoon-sized pieces
1 cup Brussels Sprouts, chopped into small spoon-sized pieces
8 oz. Spinach
32 fluid ounces Chicken Stock (if chicken was freshly prepared, use the left-over stock)
4 large Tomatoes,
6 cloves of Garlic, minced
1 tbsp Dried Basil
1 tbsp Dried Thyme
1 tbsp Dried Parsley
1 tbsp Crushed Red Pepper
1/4 ounce Bay Leaf
1/4 cup of red wine vinegar
1 tbs Salt
1 tbs Pepper
1/2 cup olive oil

Recipe Directions for Chicken & Cruciferous Vegetable Soup

  1. Boil chicken, and then shred it. Be sure to preserve the chicken stock.

  2. Sauté all fresh vegetables in a little bit of olive oil, minced garlic, salt and pepper until soft. Set aside.

  3. Combine chicken stock, diced tomatoes, red wine vinegar, dried seasonings (1/2 of minced garlic) into a pot and bring to a boil. Reduce heat and let simmer for about 30 minutes. Note: If available liquid isn?t enough to provide the appropriate soupy mixture for the volume of vegetables and chicken which will be added, then increase the volume of tomatoes and chicken stock equally.

  4. Combineall ingredients and bring to a boil. Reduce heat and simmer for 15 ? 20 minutes (adjust as needed to ensure vegetables are cooked according to your preferences)

  5. Serve with a little bit of freshly grated parmesan cheese on top.
