Lightly breaded chicken in creamy parsley sauce. Adapted from a recipe for veal, which is not in my budget.

Recipe Ingredients for Chicken with Creamy Parsley Sauce

1 medium (2-1/2" dia) Onions
0.33 cup Parsley
1 large Egg, White
4 serving Chicken
4 oz Bread Crumbs, Dry, Grated, Plain
3/4 cup Milk, Nonfat, Fluid
1/2 tsp Nutmeg, Ground
1/4 tsp Allspice, Ground
1 tsp Pepper, Black
1 tbsp Olive Oil
1 oz Wheat Flour, White, All-purpose, Enriched, Bleached
1 cup Chicken Stock

Recipe Directions for Chicken with Creamy Parsley Sauce

  1. Finely chop onion. Mince parsley.

  2. In medium bowl, beat egg white until frothy. Stir in half the parsley, bread crumbs, 1/4 c. milk and seasonings.

  3. Pat mixture evenly over chicken pieces.

  4. Heat oil in large non-stick skillet over medium-high heat. Add chicken. Cook over medium high heat until coating is crisp and golden, turning frequently.

  5. Reduce heat to medium and cook until chicken is done. Remove to plate and cover with foil to keep warm.

  6. In small bowl, combine remaining milk with flour, blending until smooth.

  7. Pour chicken stock into chicken skillet. Bring to boil, scraping up any brown bits.

  8. Stir in sauce and cook, stirring, until the sauce is thickened, about 2 minutes.

  9. Return chicken to pan, along with any juices. Add remaining parsley. Heat through, about 1-2 minutes.
