Stir fry w/ couscous instead of rice.

Recipe Ingredients for Chicken Couscous

1 cup couscous
1 cup chicken breast
1 cup onion
16 oz Broccoli Cauliflower Carrots
1 tbsp Curry Powder
1 tsp Garlic

Recipe Directions for Chicken Couscous

  1. In a small pot, boil 1 1/4 cups water w/ a pinch of salt (could use chicken broth). Cook Couscous as you would rice.

  2. Chop chicken.

  3. Stir fry chicken w/ evoo spray.

  4. Add garlic, onions and veggies & continue to stir fry - season w/ soy sauce or your choice seasoning - curry?.

  5. Serve over the couscous.
