This is adapted from Shape Magazine and was super fast and tasty.

Recipe Ingredients for Chicken, Corn, Potato Chowder

1/2 cup chopped celery
1/2 cup chopped onion
2 tablespoons olive oil
1 pound diced chicken
8 cups chicken broth
1 pound red potatoes, diced
4 cups frozen corn, carrots and green beans
1 cup 2% milk

Recipe Directions for Chicken, Corn, Potato Chowder

  1. Saute celery and onion with olive oil about 2 minutes.

  2. Add the diced chicken and saute about 2 minutes.

  3. Add the broth, potatoes and frozen vegetables.

  4. Bring to a boil and then simmer about 15 minutes until the potatoes are softened.

  5. Add the milk and serve.
