Recipe Ingredients for Chicken Corn Chili

2 tbls olive oil
1 onion
1 red bell pepper
1 tsp cumin
1 tsp chili powder
14 oz chicken broth
14 1/2 diced tomatoes
1 lbs chicken breast
12 oz corn
30 oz cannellini beans

Recipe Directions for Chicken Corn Chili

  1. Heat oil in large pot over medium heat. Add onion and bell pepper. Cook, stirring, 5 minutes. Sir in cumin and chili powder; cook 1 minute.

  2. Stir in chicken broth and tomatoes. Bring to simmer. Add chicken. Cover and simmer over low heat for 10 minutes or until chicken is cooked through.

  3. Stir corn, beans and salt into pot. Heat through. Spoon into bowls and top with cheese.
