A very delicious but kind of calorie naughty) Chicken and Corn casserole with a flour and stock based cream.

Recipe Ingredients for Chicken and Corn Casserole - Requetepollo

2 cup, chopped or diced Chicken, Breast, Meat Only
0.75 stick Butter
0.13 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1 can (12 oz) yields Corn, Sweet, Yellow
1 dash Salt, Table
1 dash Pepper, Black
0.25 tsp Garlic Powder
2.5 cup Chicken Stock
8 oz Mozzarella, Part Skim Milk Cheese

Recipe Directions for Chicken and Corn Casserole - Requetepollo

  1. Boil 2-3 chicken breasts (about 2 cups worth when shredded) in 4 cups of water.

  2. IMPORTANT do not drain chicken! save the stock!!

  3. Once chicken is boiled and cooked through, pull out of water to cool off a bit before shredding (I use two forks to shred if the chicken is still hot). Set aside the chicken stock.

  4. Heat over to 375 after chicken is shredded.

  5. In a separate pot, melt 3/4 stick of butter over medium heat, and add dash of garlic powder, dash of salt and dash of pepper. Once all melted, add 2-3 tablespoons of flour until you get a gooey and sometimes lumpy paste.

  6. turn up heat slightly and start slowly adding about 1 cup of the chicken stock while also stirring it. You may need to add up to 2 cups to get a creamy consistensy you like.

  7. Once the consistency is where you want it, add 1/2 cup of the shredded mozzarella cheese to the mix and stir.

  8. Once cheese is melted, mix the corn, shredded chicken and cream mix in a 8x8 or round casserole dish.

  9. Sprinle 1/2 cup of mozzarella over the mix and back for 20 minutes or until cheese on top is melted and starts to golden.
